Know Your Meat


The National Post takes a crash course in butcher jargon:

"Bone the entire mid-loin keeping the strip attached to fat and take out the tenderloin. Well trim the connective tissue running on top of the strip portion then roll the opposite end of the tender with the strip and tie up for my Sunday roast."
